My Favourite Tools

Essential Baking Pan

A 12-cup cupcake baking pan is an essential tool for any baker. With the capacity to bake a dozen cupcakes in one go, this pan is perfect for creating a lot of luxury quickly.  When combined with paper cases or patty pans, it ensures easy release and clean-up, preventing cupcakes from sticking to the pan and allow you to display your beautiful treats.

Buying yourself a good-quality pan will give even heat distribution allowing for uniform baking, and its durable construction ensures long-lasting use for countless batches of delectable cupcakes.

In my years of baking, I have used cheap, secondhand, other peoples and very expensive cupcake pans and have discovered that no one pan will work the same for any baker. Environment, quality of ingredients, your oven, etc will all have an effect on your final product.

General Baking Tools

Mixing Bowls

Essential for combining ingredients. Stainless steel bowls are durable and versatile, while glass bowls are microwave-safe.

Alternatives: Any large enough bowl can work, even large pots.

Measuring Cups and Spoons

Accuracy is key in baking. Look for measuring sets that include both imperial and metric measurements. One thing that may cause issues is that older recipes ask for breakfast cups or similar, these recipes you will need to jsut play around with until you find the right proportions.

Alternatives: Kitchen scales can also be used for most ingredients, offering more accuracy.

Spatulas

Silicone spatulas are great for scraping every bit of batter or dough from bowls.

Alternatives: A sturdy wooden spoon can sometimes double as a spatula.

Whisk

Either a small whisk or a larger balloon whisk is necessary for aerating batters and sauces.

Alternatives: A fork can be used for small quantities or light mixing.

Baking Pans and Sheets

Variety depends on what you plan to bake—round pans for cakes, sheet pans for cookies.

Alternatives: Oven-safe cookware like cast iron skillets can be used for many recipes.

Oven Thermometer

Ensures accurate oven temperatures, crucial for consistent results. I have found that thermometers specifically labelled as a “Meat Thermometer” works better than baking thermometers.

Alternatives: Some advanced ovens come with very accurate built-in thermometers.

Cooling Racks

Allows air to circulate around freshly baked goods to cool them evenly and prevent sogginess.

Alternatives: You can place baked goods on a cold surface or slightly opened oven door in a pinch.

Paper Cupcake Liners or Pattie Pans

Make cleanup easier and are used to prevent cupcakes from sticking to the pan. And of course they add some sparkle to your cupcakes.

Alternatives: Greasing and flouring the cupcake molds can substitute for liners.

Ice Cream Scoop

I think everyone has an ice cream scoop in the back of a draw that we have never used or ice cream. Now we have a great use for these unused little items. Perfect for scooping uniform amounts of batter into cupcake liners.

Alternatives: Two spoons can be used to divide batter evenly. If you dip each in a little warm water first, the batter will slip off with little resistance.

Turntable

Makes decorating easier by spinning the cake as you work.

Alternatives: Place the cake on a large plate over a smaller bowl to mimic rotation.
